Allerdings waren diese mit äußerster Vorsicht zu genießen, denn aufgrund der warmen Witterung im September, haben sich Essigsäurebakterien breit gemacht und es galt, die befallenen Trauben sauber auszusortieren. Grundlage für diesen Süßwein waren Trauben aus verschiedenen Parzellen des weltberühmten Scharzhofbergs, die zu 100 % von Botrytis, einem Edelfäule-Pilz, befallen waren. Die erfahrene Lesemannschaft selektierte mit größter Präzision und Ruhe minutiös die sauber einrosinierten Beeren im Weinberg. Ertrag pro Erntehelfer: gerade mal ein Eimer Trockenbeeren am Tag! Dieser immense Aufwand sollte sich jedoch auszahlen, da der goldgelbe Saft, der dickflüssig von der Korbkelter tropfte, bereits Großes erwarten ließ. Ein schneller Test mit der Mostwaage brachte dann Gewissheit. Skala gesprengt - Trockenbeerenauslese Qualität! Der Most wurde anschließend im kühlen Keller zu Scharzhof in traditionellen Fuder-Fässern spontan vergoren. Ergebnis ist ein Wein, der zunächst einmal sprachlos macht und den besten Beweis dafür liefert, warum die Weine seit mehr als 100 Jahren Legendenstatus genießen. \u003cspan data-mce-fragment=\"1\"\u003eZu Beginn zeigt sich der Wein noch etwas zurückhaltend und in sich gekehrt. Doch nach ein paar Minuten Belüftung entfaltet sich ein wahres Aromenspektakel: \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan data-mce-fragment=\"1\"\u003eUngemein tiefgründiger Duft mit wahnsinniger Exotik. Mango, Papaya, Babyananas, Kumquat und ein Hauch Maracuja reihen sich präzise aneinander, gefolgt von Rosinen, Datteln und Feigen mit erfrischend minzig-kräutrigem Unterton und kühl rauchig-mineralischem Schiefer-Bass. Am Gaumen wird dann ein wahres Feuerwerk gezündet. Unglaubliche Spannung, knisternd, elektrisierend und nahezu überbordend mit einer Dichte, Präzision und Brillanz, wie es nur die aller größten Süßweine der Welt haben. Die Konzentration ist für eine Auslese bereits außergewöhnlich, aber wirklich spektakulär ist die elektrisierende Säure, die eindeutig Eiswein-Charakter hat und mal eben die generöse TBA Süße von der Zunge schiebt und Platz macht für pikant salzige Schiefernoten - unglaublich! Nicht enden wollender Nachhall.
