These were, of course, hand-picked in mid-October and then immediately pressed as whole bunches to preserve their delicacy and elegance.  The must was then fermented in the cool cellar, in newer large wooden barrels (Fuder). These oak barrels, with a capacity of 1,000 liters, are now about 7 years old and no longer impart any wood flavor. What they do give to the maturing wine, however, is a fine structure that lends the wine even more depth and complexity.\u003c\/p\u003e\n\u003cp\u003e The nose displays incredible depth and radiance: ripe fruit aromas of white peach, Williams pear and candied lemons meet fine floral notes reminiscent of lilac and citrus blossoms, as well as yellow spice notes of turmeric and saffron – all underpinned by fine smoky slate notes. On the palate, the wine presents itself as extremely focused and rich in extract, with fine yeasty creaminess, racy acidity and a fine salty-mineral backbone. Long finish with recurring precise fruit aromas.
