This grape variety from the Pinot family (a natural cross between Pinot and white Heunisch) is also known from the nearby Upper Moselle, where it found its way from France to Luxembourg and finally across the Moselle to Germany.  For us, Auxerrois is aromatically somewhere between Pinot Blanc and Pinot Gris and has a distinctly spicy note. The vines stand directly next to the castle on the steep slate slope at the very top of the cooling forest edge. Winemaker Christian Ebert usually starts the vintage with the early harvest of the Auxerrois grapes, as he wants to prevent them from developing too much sugar and thus alcohol potential.  Because the Pinot varieties should also fit the precise and light style of the winery. Depending on the vintage, the grapes are then macerated in their own juice for a few hours to extract additional aromas from the skins. After careful pressing, the must is allowed to rest overnight so that the sediment can settle to the bottom of the tank by gravity. The next day, the clear must is gravity-fed into the deep cellar, where it is fermented in stainless steel tanks.
