He produces Pinot Noir and Chardonnay in barriques, a few hundred liters of Riesling, and now also sparkling wine – naturally, made by himself. Everything here is 100% handmade by Christoph! The cool 2021 vintage was ideally suited for the production of fine sparkling wines.  With the help of family and friends, Christoph harvested the perfectly ripe Pinot Noir grapes by hand and gently pressed them whole immediately afterwards to avoid extracting any color and obtain a light must.  As always, this was spontaneously fermented with natural yeasts in used barriques, and after extended yeast aging and biological acid reduction, it was transferred to sparkling wine bottles for the second fermentation.  The sparkling wine matured on the yeast for over two years before being disgorged in March 2024. The result is a fine, elegant Blanc de Noir sparkling wine,\u003c\/span\u003e \u003cspan\u003ean excellent food accompaniment!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e \u003cspan\u003eOn the nose, fine notes of citrus fruits and some stone fruit, clear yeast notes, some hazelnut, light tobacco and cold smoke.
