Stefan Müller usually harvests the equally impressive Euchariusberg Spätlese Alte Reben from this plot. After its debut in the dream Kabinett vintage of 2021, Stefan Müller has now definitively found the right approach. The old vines coped very well with the not entirely easy conditions of the 2023 vintage. Despite the abundance of water, the grapes remained small and loose-berried – the best prerequisites for a top-class Kabinett. The perfectly ripe grapes were of course harvested by hand and then gently pressed. The resulting must was then allowed to settle overnight before the pure must was transferred to a traditional wooden fermentation vat the next day. Due to the good nutrient supply of the must, the spontaneous fermentation proceeded smoothly. The result is a delicately dancing Kabinett that is unparalleled:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e \u003cspan style=\"font-size: 0.875rem;\"\u003eA crystal-clear, vibrant, and extremely complex nose with aromas of lemon zest, yuzu, white peach, and white currants, blending with floral notes of white blossoms like chamomile, fresh meadow herbs, and a hint of salty-tart capers – all rounded off by cool, smoky-mineral slate notes.  The palate features a veritable crackling tension, a game of \"palate ping-pong\" of the highest quality, where it's not yet decided whether the electrifying acidity or the subtle residual sweetness will win.  Everything is wonderfully buffered by the fine slate minerality, and the wine appears extremely refined and balanced with a long-lasting, invigorating aftertaste.
