Many years ago, winemaker Christian Ebert had this Pinot Blanc variety planted on selected parcels around the castle – deliberately as an exciting addition to the house's famous Saar Rieslings. The vines are rooted in steep, slate-dominated sites whose cool minerality and good aeration create ideal conditions for precise, finely structured wines. The harvest takes place early in autumn, usually at the beginning of September, as soon as the grapes have reached their perfect ripeness without becoming too opulent. This keeps the style clear, light-footed, and typical for the Schloss Saarstein winery. Depending on the vintage, the berries may rest in their own juice for several hours before pressing, which releases additional aromas from the skins. After particularly gentle pressing, the must clarifies naturally overnight before being transferred to the cool vaulted cellar by gravity alone the next day. There, the wine ferments in stainless steel tanks – a method that preserves the purity, freshness, and characteristic precision of the house.
