Saar Jahrgang 2025

The 2025 vintage in the Saar will be remembered as an extremely dynamic and in many respects pioneering vintage – a "turbo autumn" that set new standards in both pace and climatic extremes. What initially was characterized by enormous challenges ultimately developed into a vintage with impressive aromatic clarity, fruit richness, and great quality potential.

Early Start and Turbo Harvest – a High-Pressure Harvest Window

Already from the second week of September, the Riesling harvest began earlier than it had in decades. Never before were the grapes ripe so early, leading to an extremely compressed harvest period of only about 16 to 20 days for the dry wines. The winemakers had to demonstrate maximum precision and speed in the shortest possible time to ensure optimal fruit quality.

This was followed by a second harvest phase from late September to mid-October for overripe grapes, which formed the basis for noble sweet predicate wines such as Auslesen and Beerenauslesen, all the way to Trockenbeerenauslesen.

"Sunny and Humid" – a New Climate Profile

The 2025 vintage was characterized by above-average sun exposure coupled with exceptionally high rainfall. This interplay led to luxuriant vine growth, good nutrient supply, and overall very high physiological ripeness of the grapes.

During the actual harvest, about 200 mm of rain fell – a historically high value for the region. At the same time, cool night temperatures prevented early rot, so the grapes remained astonishingly clean and pure despite the difficult conditions.

Challenge and Opportunity at the Same Time

The extremely humid conditions led to very thin berry skins and an exceptionally high juice yield. In some cases, up to 65% of the must flowed as "free-run juice" without press pressure. The result is particularly fine, fruit-driven, and elegant wines without disturbing bitter substances.

Sparse, stony steep slopes – especially vines traditionally trained on single posts – clearly had an advantage. They ripened more slowly, remained healthy longer, and were significantly less affected by the intense rainfall than more densely planted trellised systems.

Style: Fruit, Clarity, and Drinkability

2025, together with 2023, opens a new stylistic class in Saar winemaking. The combination of high ripeness, intense water supply, and a warm-humid vegetation period led to full-fruited, juicy, and very drinkable wines with clear aromatics and great accessibility.

Alcohol levels turned out significantly more moderate than might have been expected given the sunny-warm weather conditions, while freshness and fruit are in the foreground – supported by a remarkably stable acid structure despite the high ripeness.

Vintage Classification

The 2025 vintage clearly ranks among the great vintages of the decade – in terms of both quality and quantity. It also marks another step towards a new climate type in the Saar and Mosel: "sunny and humid," characterized by higher dynamism, stronger rainfall, and at the same time warmer ripening conditions.

In the long term, a trend towards increasingly humid autumn conditions in the Saar region is emerging, which will further intensify the demands on timing and harvest speed. Unlike 2023, the wines are much less characterized by exotic fruit aromas and remain more on the indigenous side of the fruit spectrum. The wines present themselves as somewhat leaner, with an excellently ripe acid structure.

Conclusion: A Modern Classic Under Extreme Conditions

2025 is a vintage of contrasts: extremely early, extremely fast, extremely humid – and yet of astonishing precision and aromatic clarity. A vintage that shows how much climate and style continue to evolve in the Saar, while at the same time producing wines that impress with fruit, energy, and drinkability.

A great vintage – but in a new, modern interpretation. Here you can find all 2025 Saar wines.

At this point, a heartfelt thank you to Florian Lauer from Weingut Peter Lauer for his excellent vintage report, which forms the basis for this article. Year after year, he analyzes the vintage conditions with great scientific precision, almost like a university professor, yet at the same time manages to present the results clearly and comprehensibly. This makes the complex relationships understandable even for laypeople and greatly facilitates the classification of the vintage in comparison to previous years. This allows a much better understanding of the causes of the respective vintage style. Thank you very much, Florian!
