About the Saarstein Castle Winery
The Peter Greif winery is located in Fellerich, a small district of Tawern. Here, in the three-country corner between Germany, France, and Luxembourg, the small wine village of Fellerich lies on a hill. Excavations have shown that the Romans already cultivated vines here. No wonder, as the advantageous geographical location between the Saar and Moselle rivers, the magnificent view over the southern Moselle wine region, and good sun exposure make Fellerich an ideal location for viticulture. The Greif family has been cultivating vines here since 1832, now in the third generation. Initially, as was customary at the time, it was a mixed farm combining viticulture, agriculture, and livestock farming. However, Peter Greif Senior and his wife Marilu developed the former mixed farm into a pure bottled wine producer with an attached distillery over the last 40 years. Since 2017, Peter Greif Junior has been primarily responsible for the operation. After his training as a farm machinery mechanic and subsequent winemaking apprenticeship at the renowned VDP winery Hövel, he returned to his parents' farm to gradually develop it further. Today, the Peter Greif winery cultivates around 10 hectares of vineyards on the Upper Moselle and Saar. These are distributed across five vineyards; two on the Saar (Wawerner Goldberg and Wawerner Ritterpfad) and three on the Upper Moselle (Fellericher Schleidberg, Temmelser St. Georgshof, Oberbilliger Hirtengarten). Typical for wineries in the southern Moselle wine region is the predominant cultivation of Elbling and Burgundy grape varieties, which thrive excellently on the local shell limestone soils. The focus is clearly on white wine. Elbling, Pinot Gris, Pinot Blanc, Rivaner, and Auxerrois dominate the winery's grape variety spectrum. However, the Peter Greif winery has also been expanding to the Saar for some time and cultivates old Riesling vines in Wawerner vineyards on Devonian slate soils. The combination of Elbling and Burgundy grape varieties from the shell limestone soils of the Upper Moselle and Riesling grown in the steep slate vineyards of the Saar is what makes the winery so special!

"Certified by "Ebbes von Hei" and member of SAARKIND"

In addition to these classic white wines, master winemaker Peter Greif Junior also produces winemaker's sparkling wine using the traditional bottle fermentation method. But that's not all: In addition to wine and sparkling wine, other regional specialties such as the finest fruit brandies from the estate distillery and the Viez (apple wine), so appreciated in the Trier area, are part of the range of locally typical products of the winery. The Peter Greif winery has always placed the marketing of regional products and sustainable management of our cultural landscape at the forefront. In 2020, this was taken as an opportunity to establish the winery as the first wine producer in Rhineland-
The winery has been certified by the regional initiative "Ebbes von Hei!" (Something from here) for its Palatinate part of the Saar-Hunsrück region. This association, which operates across the border in the Saar-Hunsrück region in Rhineland-Palatinate and Saarland, is dedicated to marketing small, regional producers with sustainable business practices and high quality standards. In addition, the winery is a member of "SAARKIND", an association of 10 young winemakers from the Saar region, which has set itself the goal of jointly enriching the region with unusual activities and events. Furthermore, the winery can boast further awards. In 2010, it received the State Prize of Honour from the state of Rhineland-Palatinate for its outstanding fruit brandies, and in 2016 Peter Greif Junior was elected Young Winemaker of the Year of the Saar-Obermosel at the Konz Wine and Local Heritage Festival!

"Red Elbling, a regional specialty"

The winery works as naturally as possible in the vineyard. This means that Peter Greif categorically rejects the use of herbicides, i.e., weed killers such as glyphosate, to strengthen biodiversity in the vineyard. Instead, he uses mechanical soil cultivation to protect insects and bees and fertilizes his vineyards exclusively with organic fertilizer. The predominantly newly planted systems prove to be a great advantage in the course of the year's work, as the modern wire frame systems ensure good ventilation and sunlight for the grapes and also allow for fast and precise processing – whether by hand or machine. In autumn, the vines are harvested either mechanically with state-of-the-art whole-grape harvesters or selectively by hand, depending on the needs. The grapes are brought to the press as undamaged as possible and pressed immediately. An exception is the Red Elbling. The grapes come from vines of White Elbling. Elbling is a grape variety that tends to natural mutations, and so individual vines or even individual grapes turn dark red every year. These grapes are harvested separately and then macerated at the winery. During the maceration time, the grape's own enzymes can release the red pigments from the skin of the berries, giving the must an intense red color, even though it is a white grape variety. All wines are allowed to settle overnight in a classic manner so that coarse sediment settles at the bottom of the tank and the clear must above can be separated. This is fermented in a stainless steel tank in the over 200-year-old vaulted cellar. Neither acidification nor biological acid reduction (BAR) is carried out to produce fresh and delicate wines with wonderful drinkability.

"Audience favorite of the Wilting "Sound and Splendor Festival""

Peter Greif's wines are consistently wonderfully refreshing to drink and feature a mostly crisp acidity and clear fruit aroma. Uncomplicated everyday wines with a certain quality that win over wine drinkers. For example, in 2019, the Peter Greif Roter Elbling feinherb 2018 was the audience favorite at the Wiltinger "Klang und Glanz Festival," a wine festival organized by the young winemakers' association "SAARKIND".
