Basically, there are five types of noble sweet Saar wines: Noble sweet Spätlese are ideally made from fully ripe, golden-yellow grapes, whose precise exotic fruit aromas can also be found in the later wine. Auslese, on the other hand, are made from overripe and rotten grapes that have been affected by a noble rot fungus called "Botrytis Cinerea". The noble rot attacks the grapes in foggy autumn weather and perforates the grape skins, allowing water to evaporate and the aromas to concentrate. As a result, these wines have a rich aroma and silky texture. Beerenauslese, on the other hand, are made from individual, already shrivelled, rotten grapes. These wines have an oily texture and are particularly aromatic. The crowning glory of noble sweet wines made from Botrytis grapes are Trockenbeerenauslese, selections from completely dried grapes. These are painstakingly hand-selected from the other grapes and then laboriously pressed for hours to extract a few drops of their golden-yellow juice from the raisins. These wines have both a very high sweetness and a very high concentration and acidity, and due to these properties can easily outlast a human lifetime. A very special rarity are Eiswein, which can only rarely be produced in Germany due to climate change. Ideally, ripe and completely healthy grapes are harvested and pressed when frozen at a minimum of -7°C. The resulting wine captivates with its brilliantly fruity aroma and refreshing acidity.
