"Traditional winemaking like in the old days"
In the vineyard, the father-daughter team relies on traditional farming methods. A large proportion of the total 3.5 hectares of vineyard area is planted with old vines, which makes manual work indispensable. 90% of the vineyard area is planted with Riesling, 10% with Pinot Blanc. After a long growing season of up to 140 days between flowering and harvest, the ripe grapes are selectively harvested by hand in autumn, then brought whole to the press and pressed directly. Afterwards, the must is allowed to settle overnight in a stainless steel tank to separate it from sediment and then transferred to the wooden barrel cellar for fermentation. Here they may...
then the natural yeasts do their work and the wine spontaneously ferments in traditional 1,000l Mosel-Fuder barrels.

Year after year, approximately 20,000 bottles of Saar wine are produced here, distributed across a portfolio of four to five wines, predominantly in the dry and semi-sweet taste range. The focus is on the Kabinett range, as the Piedmonts strive for light, fruit-emphasized Saar wines in which a subtle, "serving" residual sweetness is welcome. As an alternative to the house's sparkling Rieslings, the Weißburgunder (Pinot Blanc) should be highlighted, which, with its comparatively low alcohol content and pleasantly mild acidity, is an ideal accompaniment, for example, to asparagus prepared in the classic way with brown butter.
