Basically, a Kabinett is a so-called Prädikatswein (a wine of a certain ripeness level). According to German wine law, Prädikatsweine may not be chaptalized, meaning they may not be enriched with sugar during fermentation. Kabinett is the first of six Prädikatswein levels, and depending on the growing region, the individual Prädikatswein levels must meet certain minimum must weights. Thus, a Kabinett must have between 73 and 80 °Oechsle, depending on the growing region and whether it is a red or white wine – on the Mosel-Saar-Ruwer, the minimum must weight for a Kabinett is 73° Oechsle. The grapes used should be just ripe and healthy, exhibiting clear, fine fruit aromas and crisp acidity. Furthermore, the Kabinett must meet the minimum standards of a Qualitätswein (quality wine), meaning the grapes must come from a single growing region and receive at least 1.5 points in the official Qualitätswein inspection. Kabinett wines can be produced in all sweetness levels, from dry to semi-sweet to sweet, although leading VDP (German Winegrowers Association) estates have agreed that Prädikatsweine should be reserved exclusively for sweet wines.
